This is a decadent dessert that is a total retake on the typical “flourless” chocolate brownie which incorporates two different types of fiber/resistant starches: black beans and oatmeal. Both have proven to be beneficial for overall gut health, weight and fat loss and is a great way of getting carbohydrates into our body without taking the calorie or insulin spike that you would normally get from starchy carbohydrates. Resistant starches (RS) actually bypass the intestinal track which in turn feeds the friendly bacteria in you lower intestine and colon.
Preheat the oven to 350 degrees F.
Line a large baking dish with parchment paper. In a food processor, add all ingredients except cocoa powder and cinnamon and pulse until well combined and smooth. Pour mixture into a large bowl and stir in the cocoa powder and cinnamon.
Pour batter into prepared baking dish evenly and with the back of a spatula, smooth the top surface. Bake for about 30 minutes.
Remove from oven and set aside to cool. With a sharp knife cut into 12 equal sized squares and serve.
