Gluten-Free Chocolate Pie with Almond Crust

One of my friends is extremely gluten sensitive and one summer she brought over a strawberry cheesecake that was gluten-free and it was to die for! I couldn’t believe how delicious it was. She used rice flour and butter for the crust. Alexx, this one is for you and I will be asking for that recipe to share with everyone!

Instructions
Almond Crust:
  1. Preheat the oven to 350 F
  2. Mix all the ingredients the almond flour, the pitted date, egg and the oil in the food processor until you have a dough. Place the dough into a non-stick round mold
  3. Place baking paper on top and use beans to weigh the dough down. Place in the oven and bake for 15 minutes. When done, remove from the oven and fill with chocolate filling
Chocolate Filling
  1. Place cans of coconut cream in the refrigerator overnight. The next day open the can carefully and scoop out the thick cream sitting at the top. Transfer it into a bowl. Add the agave syrup and beat on high using a hand mixer until thick and creamy.
  2. Fold the cocoa powder and salt into the cream and beat again until smooth and well combined. Transfer the chocolate filling into the almond pie and refrigerate until set.
  3. Sprinkle with Cocoa nibs chocolate. Place in the refrigerator for 2 hours. Serve cold.
