Low-Carb Keto Bacon and Egg Hash

If you’re craving a hearty, feel-good breakfast but are watching your carbohydrate intake, try this low-carb keto bacon and egg hash.  Its made with bacon, turnips instead of potatoes, zucchini and squash.  Turnips make a surprisingly good substitute for potatoes with only 1/4 of the carbs.  Feel free to add your own favorite ingredients to make this recipe your own.

Waking up early in the morning after working a 14-hour day, my body craves for something substantial like a breakfast hash. Sadly potatoes, the breakfast staple, aren’t the best option for a keto lifestyle. However, you'll be surprised on how turnips can be used as a substitute for nearly all potato recipes with less than a quarter of carbs of potatoes. I also added zucchini and yellow squash for different texture and flavor. Add some eggs and bacon into the pan and you have all the makings of the perfect keto hash.

  • 5 slices thick-cut bacon cut in 1 /2 pieces
  • 1 cup yellow onion 1/4-inch diced
  • 1 cup turnips 1/4" diced
  • 1 cup yellow squash 1/4" diced
  • 1 cup zucchini 1/4" diced
  • 3 tablespoon parsley minced
  • 4 large eggs
  • 1 cup sharp cheddar cheese
  • Salt and pepper to taste
  1. Keto Hash Instructions
  2. In a large skillet, cook bacon over medium heat about 5 minutes or until crispy. Remove bacon and set aside. Remove all but 2 tablespoons of the bacon fat and return to high heat. Add onion, turnip, yellow squash, and zucchini. Stirring it a couple of times, cook it about 5-7 minutes or until browned then add bacon back. top with cheddar cheese, salt and pepper to taste. Crack 4 eggs into hot hash, cover for 3-4 minutes allowing eggs to cook to your desired temp. Garnish with parsley and additional salt and pepper if necessary.
